I am a big fan of salads. I could eat one everyday. Well unless pizza is being served. My wife, Michele got me a cool book: Real Simple–Meals Made Easy. I guess she figures I don’t like to cook… Just kidding, I love to cook!
Today, I am making a really simple chicken salad with leftover Rotisserie Chicken from Sam’s Club.
IngredientsÂ
1 bag of salad greens
1 store-bought rotisserie chicken, mea sliced into bite-sized pieces
2 peaches, roughly chopped. I used frozen peaches as no fresh ones were available here in Alaska
3/4 cup crumbled blue cheese
1/2 cup almonds, roughly chopped
1/4 cup white wine vinegar
1/4 cup extra-virgin olive oil
1 teaspoon kosher salt
1/4 teaspoon black pepper
Preparation
Arrange the lettuce, chicken, peaches, cheese and almonds on a platter. Whisk together the vinegar, oil, salt and pepper in a small bowl. Drizzle the vinaigrette over the salad.
try this next time…
- use different types of fruit (depending on what is in season in your area): thinly sliced pears, halved red grapes.
- replace lettuce (salad) with spinach
- swap goat cheese for the blue
- go with walnuts instead of almonds
